From Prairie Moon Nursery:
Bottlebrush Grass, Elymus hystrix or Hystrix patula, is a cool-season grass; it actively grows during the spring and fall when soil temperatures are cool. Bottlebrush Grass provides texture and interest in shaded areas. It is a staple grass in our Savanna and Woodland seed mixes and is a larval host to the Northern Pearly Eye (Lethe anthedon).
Taller, woodland grasses like Wood Reed Grass (Cinna arundinacea) and Bottlebrush Grass are typically left alone by white-tailed deer and other herbivores as they prefer understory woodland shrubs and forbs.
